Caracterização e quantificação do uso da lenha em padarias e pizzarias de Cruz das Almas – BA

Abstract

The wood supply continues being an impulsive practice when it comes to establishments that use wood as an energy source, therefore, affecting directly the illegal extraction that occurs at Cruz das Almas, once the firewood is commercialized without the correct inspection. The purpose of the characterization and quantification of the wood material of the municipality of Cruz das Almas is to establish a demand of firewood for the city. Semi-structured interviews were conducted with a representative owner of each establishment of Cruz das Almas. Information, related to the amount and periodicity of wood usage in Cruz das almas, was gathered, as well as questions related to the origin of the material and the owners’ view about the wood usage. The data obtained from the interviews was analyzed using descriptive statistics. It was observed that 60% of the 16 establishments that participated in the survey use firewood in their activities. It was verified that the establishments that verify the origin of the wood pay more for the material, when compared to the establishments that don’t have the same kind of concern. Thus, it was concluded that the wood material used by bakeries, supermarkets, restaurants and others, in this region, has a constant demand value even with the verification of the origin of the wood and the price offered.
